My Own Version of Humba

Humba is simply a sweet pork dish. It is similar to pork adobo. Humba is popular in my native country, the Philippines. It is actually one of the delicacies and mostly served during birthdays and town fiestas. The part of the pig that is best used for humba is the pork belly.

Humba contains all of the same ingredients as adobo except for the sugar. Some people like their humba to have salted black beans and banana blossoms.  Since I did not have those ingredients handy, I tried making some using only the ingredients that I had available. Below you can find my humba recipe.

My Own Version of Humba

Ingredients
  • 1 lb pork belly
  • 1 medium sized onion, diced
  • 3 cloves garlic, minced
  • 1/4 cup soy sauce
  • 3 tablespoons lemon juice
  • 2 pieces of dried bay leaves
  • 1 teaspoon of whole peppercorn
  • 2 cups of water
  • sugar to taste
Instructions
  1. Slice the pork belly to the desired size.
  2. Put the pork belly in a pot with garlic, onion, water and boil for a few minutes or until the meat gets tender.
  3. Pour off the excess water.
  4. Then add the lemon juice, soy sauce, peppercorn, bay leaves, sugar and let simmer.
  5. Serve hot and enjoy.
